Sable brushes are made from hair and are a lot softer than nylon brushes.
As to whether they are better it really depends on what it is you are painting and the finish that you want to achieve.
If you were to paint a model tank, a nylon brush would be fine.
I personally use sable brushes for most things as they are lot softer and seem easier to control.
Some modellers use just nylon brushes.
As with all modelling it comes down to trial and error, so maybe get yourself some of each and see what works best for you.
